Ozlem Graves, our Turkish tutor, introduces a menu from the southeastern region of Turkey, an area renowned for its cuisine. Spices are one of the defining features of this region, because of its location on the former spice and silk routes. The silk and spice trading routes brought influences from around the world creating a spicy aromatic cuisine that includes yoghurt-based mezze dishes. Smoked baked red pepper flakes, paprika, sumac and mint. Kebabs are very popular, also syrupy pastries with nuts. Prepare to have your taste buds indulged with the vibrant and aromatic flavour combinations of this region, unique both in taste and texture. 

This menu is perfect for entertaining or an adventurous family meal:

  • Koz biberli meze - walnuts and feta yoghurt mezze with roast red peppers
  • Ekmekli ispanak salatasi - almonds and spinach salad with toasted spice pitta
  • Patlicanli beyti kebab - baked spice kofta and aubergine rolled in filo pastry with lemon tahini topping
  • Saray tatlisi - walnut and sesame filo rolls in cardamom syrup
