Sasi returns to the school for class on Southern Indian delicacies.  The cuisine of Southern India is known for its light, appetising dishes. Ingredients like mustard seeds, dhal, hing (asafoetida), turmeric, black pepper and curry leaves are used to give a perfect blend of flavour, colour and taste.  South Indian dishes are not just delicious but healthy, light and easily digestible.

You will learn how to cook:

  • Village style chicken - a Southern Indian variation on a chicken curry served on special occasions.
  • Spinach kootu - made with coconut masala in Southern India which creates a rich gentle dal
  • Chapathi
  • Carrot and cucumber pachadi - served as a cooling accompaniment but with a different flavour to a Northern Indian raita
