The beautiful Ionian island of Paxos is where Greek and Italian cuisines meet. The island’s lucky cooks have the best of two worlds: simple, rustic Greek ingredients and flavours - lifted with Italian style and panache... Belinda Harley, author of 'Roast Lamb in the Olive Groves' demonstrates a treasure-trove of techniques for cooks – and shows you how to make culinary voyages of your own.

During the morning, tasting as you go, you will cover precious ancient knowledge:  how to make real tzatziki; tiny hot pies of melting cheese and weeds; how to cook octopus and squid…and explore the new: lovely pasta recipes with crab, chilli, orange zest; surprising and beautiful carpaccios; lamb with artichokes; imaginative summer salads and magical desserts – like fresh basil ice cream – which you could serve at a very smart dinner party. 

On this course you will be invited to sit back, relax, taste and soak up Belinda's experience of how to entertain the Mediterranean way. Her talk, demonstration and tasting will be followed by lunch from the repertoire.
